INGREDIENTS

For the Cake

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup pureed strawberries (fresh or frozen, )

For the Strawberry Buttercream

1cup unsalted butter, softened

4 cups powdered sugar

¼ cup pureed strawberries

1 tsp vanilla extract

Pinch of salt

METHOD

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

2. Prepare the Cake Batter:

  • In a large bowl, cream together the softened butter and sugar until light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition.
  • Stir in the milk, pureed strawberries, and vanilla extract until combined.
  • In another bowl, whisk together the flour and baking powder, then gradually add to the wet ingredients. Mix until just combined.

3. Bake the Cake:

Divide the batter evenly between the prepared cake pans.

Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Let the cakes cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.

4. Make the Strawberry Buttercream :

In a large bowl, beat the softened butter until creamy.

Gradually add the powdered sugar, mixing well after each addition.

Stir in the pureed strawberries, vanilla extract, and a pinch of salt.

Place one cake layer on a serving plate.

Spread a layer of strawberry buttercream on top.
